Skinny Chicken & Broccoli Alfredo

Tonight I tried another recipie off of Pinterest.  I made Skinny Chicken & Broccoli Alfredo, it was pretty good but I felt it was missing something.  Hubby bought fat free chicken broth so that was probably the problem.  I added salt to mine and it helped.  When hubby got home and fixed his plate together he added bacon and salt....I just starred and thought omg why didn't I think of adding bacon!  He said it was really good.  So, that's it, next time i'm adding bacon! :)

Skinny Chicken & Broccoli Alfredo

Ingredients
3 boneless, skinless chicken breasts, grilled and cut into chunks (about 2 cups)
2 cups roasted broccoli florets
8 ounces fettuccine
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons flour
1 cup fat-free, low sodium chicken broth
1/4 cup plain Greek yogurt
1/4 cup skim milk
1/4 teaspoon pepper
1 pinch ground nutmeg
3/4 cup freshly grated Parmesan cheese

Directions
In a pot of boiling, salted water, cook the pasta according to package directions. Drain and set aside.
In a medium saucepan, heat the olive oil over medium-low heat. Add garlic and cook, stirring frequently, until the garlic is golden, 1 to 2 minutes.
Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the chicken broth, Greek yogurt, milk, pepper and nutmeg. Bring to a low boil, stirring constantly. Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes. Stir in 3/4 cup Parmesan.
Add cooked chicken and broccoli to sauce mixture, followed by the cooked pasta. Toss to combine and serve with more Parmesan, if desired.

I baked... a lot today!

This morning when I got up I had an urge to bake...I wanted anything and everything so I made what I could with the ingredients I had.  I made Lemon Bread again...gosh that stuff is soooo good!  The most amazing Chocolate Chip Cookies i've ever had and peanut butter cookies...just cause I could!

Here's my chocolate chip cookies...a friend gave me this recipie and i'll never use another again!

and now for the ingredients :)

2 1/4 cup flour
1 tsp baking soda
1 tsp salt
1 cup butter, melted and cooled slightly
1 cup of packed brown sugar
1/2 cup white sugar
2 large eggs
1 tsp vanilla extract
2 cups chocolate chips
1 1/2 chopped walnuts optional
1.  preheat oven to 375
2.  combine flour, baking soda, salt in mixing bowl
3.  cream butter and sugars in another bowl, add eggs vanilla and beat until smooth, put in fridge for  8-10 minutes
4.  drop batter onto ungreased tray
5.  cook for about 10 minutes ( this is pretty exact )


I like peanut butter cookies but hubby likes them the best.  As soon as he was done dinner he was right into them just as I knew he would be.



These are the easiest cookies to make, and anyone can do it!  Here's what you need.

1 cup Kraft Smooth Peanut Butter
1/2 cupsugar
1 egg
 
Seriously, that's it.
 
Mix all ingredients until well blended, roll into small balls or use a small scoop, place on ungreased cookie sheet , flatten with a fork and bake at 325 for about 8-10 minutes!



Party Time!!!

It's party day!!  We are having a joint birthday party with my friends boys.  Quentin turned 2 on the 8th and Harpers birthday turns 4 on the 19th.  We thought it would be easier just to get the all done at once.  It actually went pretty well and the time went by so fast!  I still can't believe my baby is 2..I wish they could stay little forever....without the random tantrums lol!

I made the cakes for the party.  I choose a Monster theme since all 3 are little monsters lol!  I stayed up until 1:30 am finishing the cakes and thanks to my lovely hubby for helping with one of the cakes which near cake time wasn't surviving very well.  I guess it was too warm and the icing was too soft and it was litterally melting away.  We got some good pics before the mishap so i'm happy about that!

The party went pretty good, I felt it went a bit fast...I wanted it to last all day.  I did end up staying with my boys and a friend for about an hour longer after everyone left to let the boys play...they love it there.   All the kids had a great time!

I took a few pics of the set up...nothing special..just kind of thrown together lol!  You can't really do much when it's not at your own home...but it still looked good :)

Happy Birthday Little Boo!

Alex is 2 today!!!!  I can't believe it!!   Today we are just going to chill at home and then when kevin gets home form work we are going to go to Red Robin for dinner!

I left Alex's presents in the living room for him so when he woke up and saw them all he'd be super excited...and he was. Today is his special day and it was all for him!








Alex loved all the gifts until he opened the last one.  He took all the tissue out and pulled out the clothes..realized they were closed and tossed them all to the side saying "no mommy no"


 and finished off with this sad face :( Note to self, no more clothes for birthday presents lol!

Red Robin!

We took Alex for dinner at Red Robin, one of all our favorite restaurants!  I wish I could say this visit was exciting and fun but our server was not that great so neither was our visit there.  The food was good and the boys enjoyed themselves but that was it.

Happy March 1st!

I was going to go out today, but the grey covered sky just didn't sit well with me so I choose to stay home.  I found another cool project on pinterest I wanted to make for the boys so we did that.  It's called Cloud Dough and is super easy to make only calling for 2 ingredients!  Flour and baby oil!  The boys had so much fun with it, it's super soft, fluffy and smells great!









Alex wanted to eat it at first but after a few "no's, it's for play only" he did great!  Tomorrow i'm going to add sparkles to it to keep it interesting!  Great thing is you can save it just like you can playdough till it gets yucky!  A great project for kids that keeps them busy and doesn't cost an arm and a leg to cost! - Love it!

Cloud Dough
8 cups of flour
2 cups baby oil
