Happy Halloween!

It's halloween and raining like crazy outside.  Ryan picked the costumes this year, yes even Alex's.  Ryan wanted to be a tiger and he wanted Alex to be a monkey.  I was cool with that ;)  The boys had preschool this morning so i dressed them up in there costumes and we were on our way.

Preschool was super busy, lots of kids and parents.  It's amazing how many people find out about the holiday parties.  You get people that show up like once a month, and new people...I swear everyone and there grandma was there lol!  Days like this are too busy for me but I go because it's for the boys. 

Each holiday I usually make cupcakes but I came down with a nasty cough and a really bad headache and just didn't have the motivation or the energy to make them.  I felt so bad as I had already been doing it for the last 2 years.  I'm sure i'll make up for it though :)

Kevin had to work graveyard tonight so my dad came over to help me take the boys out.  I'm glad he did!  With the rain and the boys being excited and me being under the weather I just don't know that I would have done as much as we did with out him.  We just went around our townhouses and the boys got a good haul of candy.  After we were done the boys handed out candy that we had bought.  There are some tall...big...old trick or treaters out there lol!  All in all it was a good night, I was glad to get to bed though.  I hope next year calls for no rain!!

Peach Cobbler!

So my hubby decided he wanted to bake and he found a recipe for Peach Cobbler.   He went shopping, got the ingredients and came home and baked.  It smelt good coming from the oven and when it was done tasted even better!  I was so impressed with it I begged him to make another the next weekend!

Ingredients:
8 fresh peaches - peeled, pitted and sliced into thin wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch

1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water

MIX TOGETHER:
3 tablespoons white sugar
1 teaspoon ground cinnamon


Directions:
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, combine peaches, 1/4 cup  white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.
