Mashed Potatoes with Cheese and Bacon!

I'm finding all these yummy things to make from this addictive site called Pinterest.  I can't help but share the recipies that I love.  Today I decided to make Mashed Potatoes with Cheese and Bacon.  all I gotta say is YUM!  Ya gotta try it! :)



 Ingredients:

  • 5 lb russet potatoes
  • 10 sli bacon
  • 8 oz cream cheese, room temperature
  • 0.5 c unsalted butter, melted
  • 1 c sour cream
  • 0.25 c chives, minced
  • 2.5 c cheddar cheese, grated
  • 2 t kosher salt
  • 0.5 t pepper

Directions

1. Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Cook until tender and easily pierced with a paring knife, about 20 minutes. Transfer to a colander to drain; return to pan, cover, and set aside. 2. Meanwhile, heat a large skillet over medium heat. Add bacon, and cook until crisp and browned, turning once. Transfer to paper towels to drain; let cool, and crumble into pieces. 3. Using a fork, mash the potatoes in pan until light and fluffy. Add the cream cheese, butter, and sour cream, and stir until combined and smooth. Add the chives, 2 cups cheddar cheese, half the bacon, salt, and pepper. Stir until well combined. 4. Transfer to a buttered 3-quart baking dish. Top with remaining 1/2 cup cheddar cheese. Bake until top is slightly golden and potatoes are heated through, about 30 minutes. Remove from oven; garnish with remaining bacon. Serve immediately.

Ok, well they are beautful to me...but i'm sure they would prefer handsome...and they are that as well.  I wish I could freeze time and keep them this young....they are just too adorable!


I can't believe this little man is going to be 2 in 2 weeks!  Where has the time gone?!  Ugh, he's so sweet I just wanna squish him all day lol!

Lemon Bread/Loaf

Found this recipie on pinterest....tried and love it! 

This is my version made with a new cake pan I recieved.  Next time I will actually use a loaf pan.  I don't think it matters what pan you use, it's still delish! D



Ingredients

1/2 cup (1 stick) butter or margarine, softened

1 cup sugar

2 eggs

3 tablespoons lemon juice

1 1/2 teaspoons grated lemon peel

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/8 teaspoon salt

1/2 cup milk


 
GLAZE:

2 tablespoons lemon juice

1/2 cup confectioners' sugar

Directions

In a mixing bowl, cream butter and sugar. Beat in eggs, lemon juice and peel, and vanilla. Combine flour, baking powder and salt; stir into creamed mixture alternately with milk. Pour into a greased loaf pan (or alternately into a muffin tin - makes 12 muffins). Bake at 350 degrees F for 45 minutes or until bread tests done (approx 20 minutes for muffins). Combine glaze ingredients. Remove bread from pan; immediately drizzle with glaze. {I like to double the glaze, poke holes in the top of the bread, add half the glaze while the bread is hot from the oven and then add the other half after it has cooled a bit}

Happy Valentines Day!

Today is Valentines Day and I decided to do a project with the boys...all 4 boys!  I got them to make valentines day cards for there dad/parents.  It went pretty well!  I painted all the boys hands red (one at a time of course) while the others waited patiently - seriously the did! and tried to make heart shapes with them.  Then I let paint try while I helped each boy do there and then after I let them add sparkles, draw and glue hearts on them.  I love how they turned out and these are 100 times better than buying those expensive cards at the store!

I tried to search for anything pink or red that I had to make the cards, I think I did pretty good.

Ryan very happy with how his card turned out, he had to hang it on the fridge and couldn't wait for daddy to get home to see it - Daddy LOVED it!



How adorable are these?!  I wish I would have got one ...but dads don't think of stuff like that :/  :p

After we made all the cards I started lunch.  It was valentines day so why not make some heart shaped sandwiches...and some apples!  I got a little crafty today :)

They should all be models for The Childrens Place clothing store...since they are so adorable and are actually all wearing stuff from there lol!

Cool Dudes

The snow is gone, and it's finally stopped raining which meant it was nice enough to take the boys out so they could finally ride there bikes.  They were pretty happy and had a good time!

Ryan loves his new Big Flyer.  I got this for his birthday using my pampers points (diaper points) for those who don't know what i'm talking about ;)  I got this baby for free! 


Alex is learning to ride his tricycle but he still can't quite reach the pedals....so enough and he'll be zooming around everywhere!


I love it when they are happy like this, it makes me happy <3



Bacon Cheeseburger Chicken!

Wow...ok, this was so good that I just had to share!  I found a recipe on Pinterest...if you aren't addicted yet you should be! 

Anyways I found this chicken recipe that looked good...but weirded me out just a tad.  It said to use teryaki sauce and ranch.  I don't know about you but I like stuff like that seperate and mixing them just seemed wrong.  I wanted to make something different so I said what the heck and I made it.  One bite and I was like WOW  yuuuumy!  Oh I forgot to mention there's chedder cheese, bacon and of course chicken involved lol!

Here are some pics first...then i'll tell ya how to make it :)

Ok, so here's what you do...get some chicken, cook each side in a frying pan for about 4-5 min, then take it out and put in in a caserole dish...add some teryaki sauce, and some ranch on top of that, and some chedder cheese and lastly cut some bacon into small pieces and add that on top!  Bake it in the oven for about 15-20 min and that's it!  Super easy and Super yummy!   Next time I do it i'm gonna bake it for about 15 minutes and then add the cheese and bacon for the last 5 minutes.  I found that putting in on in the begining made all the cheese slide off...i'm not sure if it would still happen or not but i'm gonna give it a try and see how it goes...either way this is dam good!
